Hot Dog and Potato Hash

This easy, delicious recipe serves roughly two to three people, to make a larger batch just add an extra 2 potatoes and hot dogs. 

Ready in 1.5 hours
Prep Time: 10 minutes
Cook Time: 50 - 65 minutes












Ingredients
  4 medium Potatoes
  5 hot dogs
  2 tablespoons Canola, Vegetable or light Olive Oil
Vegetables (chose as many as you like from the below list)
  Red, Yellow, Green Peppers
  Yellow, Green Squash
  Onions                                         
  Carrots
  Peas
  Corn
  Green Beans
  Asparagus
  Broccoli
  Chives
  Jalapeno Peppers


There are a multitude of different spice combinations that go well with this dish.  I like to make it two different ways, savory or spicy.  If you like your dishes spicy, I suggest using a red pepper spice blend or red pepper flakes along with 2 - 3 tablespoons of hot sauce.  If you like your meal savory, add 1- package French Onion Soup mix or even ranch dressing powder mix.

  Salt                                                              Salt
  Pepper                                                         Pepper
  1-pkg French                                                Red Pepper Flakes
  Onion Soup mix                                           Hot Sauce


Step 1
Clean and cut all veggies, potatoes and hot dogs
Step 2
Add 2 tablespoons Canola, Vegetable or light Olive Oil to a large sauté pan on medium high heat.

Add potatoes
Salt and pepper to taste
Let cook turning every 10 minutes for roughly 30 minutes, or depending on how crispy you like your potatoes. 




 Add onions and cook another 10 minutes or until onions are slightly brown

Step 3
Add hot dogs, veggies and choice of savory or spicy spices



Cook vegetables and meat to your texture preference, 10 minutes al dente, 15-20 for softer vegetables.


Serve with Ketchup or Hot Sauce! Yum!
